# Expert Advice:

01 -
  • It comes together in the time it takes to chop a few vegetables, no heat required.
  • Every bite tastes fresh and bright, like you put real effort in even though you didn't.
  • You can toss in whatever extras you have on hand and it still works beautifully.
02 -
  • Don't add the avocado until right before serving, it turns brown quickly and loses its appeal.
  • If you're making this ahead, keep the dressing separate and toss everything together at the last minute.
  • Rinsing the canned beans and corn really does make a difference, it removes the metallic taste and excess sodium.
03 -
  • Taste the dressing before you pour it over the beans, it should be punchy and a little tangy so it doesn't get lost in the mix.
  • Use the ripest avocado you can find, it makes all the difference in texture and flavor.
  • If you don't have cumin, smoked paprika works too and adds a subtle smokiness that's really nice.
