17 - 1 1/2 cups granulated sugar
18 - 1/3 cup light corn syrup
19 - 1/4 cup water
20 - 1 teaspoon vanilla extract
21 - 1/2 cup dried cranberries, chopped
22 - 1/2 cup powdered sugar, for dusting
23 - 1/2 cup cornstarch, for dusting

# Directions:

01 - Line an 8x8 inch baking pan with parchment paper and dust evenly with a blend of powdered sugar and cornstarch.
02 - In a small bowl, sprinkle gelatin over cranberry juice and allow to bloom for 10 minutes.
03 - Combine granulated sugar, corn syrup, and water in a saucepan over medium heat. Stir until the sugar dissolves, then raise the heat and boil without stirring until the mixture reaches 240°F on a candy thermometer.
04 - With an electric mixer on low speed, slowly pour the hot syrup into the bloomed gelatin mixture. Increase speed to high and whip until the mixture becomes thick, glossy, and triples in volume, approximately 10 minutes. Mix in vanilla extract and gently fold in the chopped dried cranberries.
05 - Spread the marshmallow mixture evenly into the prepared pan. Dust the surface with additional powdered sugar and cornstarch. Allow to set uncovered at room temperature for 4 hours.
06 - Remove the marshmallow slab from the pan and cut into cubes. Dust all sides with the powdered sugar and cornstarch mixture.
07 - On a large serving board or platter, arrange prosciutto, soppressata, smoked turkey, aged cheddar, brie, and gouda in visually distinct sections.
08 - Place grapes, strawberries, and dried apricots in separate piles. Serve roasted almonds, pistachios, and mixed olives in small bowls or grouped on the board.
09 - Fan baguette slices and arrange assorted crackers in stacks beside the other components.
10 - Serve cranberry marshmallows in a small bowl or artfully grouped on the board.
11 - Optional: Garnish with fresh herbs for added color and aroma. Offer with a light, fruity red wine or sparkling rosé.
