# Directions:
01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Pound chicken breasts to an even 1/2-inch thickness and season both sides with salt and black pepper.
03 - Place flour into one shallow bowl, whisk eggs with milk in a second bowl, and combine breadcrumbs, 1/2 cup Parmesan, garlic powder, oregano, salt, and black pepper in a third bowl.
04 - Coat each chicken breast thoroughly: dredge in flour, dip into egg mixture, and press into breadcrumb mixture.
05 - Heat 1/4 cup olive oil in a large skillet over medium-high heat. Fry chicken 3-4 minutes per side until golden brown, then transfer to prepared baking sheet.
06 - In a saucepan, heat olive oil and butter over medium. Sauté onion 3-4 minutes until softened; add garlic and red pepper flakes and cook 1 minute.
07 - Add vodka; simmer 2 minutes to evaporate alcohol. Stir in crushed tomatoes and sugar; simmer for 10 minutes.
08 - Stir in heavy cream and 1/4 cup Parmesan cheese. Season with salt and pepper; continue to simmer 2 minutes more.
09 - Spoon vodka sauce generously over each fried chicken breast. Sprinkle with mozzarella and additional Parmesan cheese.
