# Directions:
01 - Warm olive oil in a large skillet over medium heat. Add finely chopped onion and sauté until translucent, about 3 minutes.
02 - Incorporate minced garlic and diced red bell pepper; cook for 2 to 3 minutes until softened.
03 - Stir in ground cumin, smoked paprika, ground coriander, and optional chili flakes. Cook for 1 minute until aromatic.
04 - Add drained chickpeas, grated carrot if using, and diced tomatoes with juices. Mix thoroughly and bring to a simmer.
05 - Allow the mixture to simmer uncovered for 8 to 10 minutes, stirring occasionally, until slightly thickened.
06 - Add chopped fresh spinach and cook while stirring until just wilted, approximately 2 minutes.
07 - Season with salt, pepper, and freshly squeezed lemon juice. Remove from heat and sprinkle with chopped parsley or cilantro.
08 - Serve warm, optionally accompanied by crusty bread, rice, or quinoa.
