Golden toasted bread filled with crispy fried pickles and melted cheddar for a tasty twist.

# Components:

→ Fried Pickles

01 - 1/2 cup sliced dill pickles
02 - 1/4 cup all-purpose flour
03 - 1 large egg
04 - 1 tablespoon milk
05 - 1/2 cup panko breadcrumbs
06 - 1/4 teaspoon garlic powder
07 - 1/4 teaspoon smoked paprika
08 - Salt and black pepper to taste
09 - Vegetable oil for frying

→ Sandwiches

10 - 4 slices sourdough or white bread
11 - 2 tablespoons softened butter
12 - 1 cup shredded cheddar cheese
13 - 1/2 cup shredded mozzarella cheese

# Directions:

01 - Pat dill pickle slices dry with paper towels. Set up three shallow dishes: place flour in the first, whisk egg and milk together in the second, and combine panko, garlic powder, smoked paprika, salt, and pepper in the third. Coat each pickle slice by dredging in flour, dipping in egg mixture, then coating with seasoned panko. Heat vegetable oil in a skillet to cover 1/2 inch over medium-high heat and fry pickles in batches for 1-2 minutes per side until golden and crisp. Drain on paper towels.
02 - Butter one side of each bread slice. Place two slices, butter-side down, on a clean surface. Evenly spread half the cheddar and mozzarella cheese atop the bread, layer the fried pickles over the cheese, then sprinkle with the remaining cheese. Top each sandwich with the remaining bread slices, butter-side up.
03 - Heat a clean skillet over medium heat. Cook each sandwich for 3 to 4 minutes per side until the bread is golden brown and the cheese is fully melted.
04 - Slice sandwiches in half and serve immediately while hot.

# Expert Advice:

01 -
  • The fried pickles add an unexpected crunch and zing you normally only get from your favorite appetizer.
  • It&aposs ridiculously easy to throw together, but people always ask for the recipe after one bite.
02 -
  • If the pickles aren’t dried well enough, the breading slides right off and you’re left with soggy bits in the pan.
  • Pressing the sandwiches lightly with a spatula helps the cheese melt evenly and form that perfect crisp layer outside.
03 -
  • Test one pickle before frying the whole batch — that way you get the seasoning and texture just right.
  • Layering cheese on both sides of the pickles means every bite stays perfectly held together, no matter how cheesy you like it.
