# Directions:
01 - Lay out the sourdough bread and spread a generous amount of softened butter on one side of each slice.
02 - Flip each slice so the buttered side is facing down. On two slices, arrange sharp cheddar and mozzarella cheese evenly across the surface.
03 - Distribute the chopped kimchi evenly over the cheese. Sprinkle with green onions if using, and drizzle a small amount of gochujang for extra heat, if desired.
04 - Top each prepared half with a remaining bread slice, ensuring the buttered side faces out.
05 - Preheat a large skillet or griddle over medium-low heat.
06 - Place the assembled sandwiches, butter side down, onto the heated skillet. Cook for 3 to 4 minutes until the bottom is golden brown. Carefully flip and continue cooking another 3 to 4 minutes until cheese is melted and the other side is golden.
07 - Remove sandwiches from the skillet and let rest for 1 to 2 minutes. Slice with a bread knife and serve hot.
