# Directions:

01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - Whisk together all-purpose flour, baking powder, and salt in a medium bowl.
03 - Beat softened butter and granulated sugar with an electric mixer on medium speed until light and fluffy, 2–3 minutes.
04 - Incorporate egg and vanilla extract into the butter mixture until fully combined.
05 - Gradually add dry ingredients to wet, mixing and scraping down sides of bowl until a soft dough forms.
06 - Divide dough into two portions. Wrap each in plastic wrap and chill for at least 30 minutes.
07 - On a lightly floured surface, roll dough to 1/4-inch thickness. Cut out rounds or festive shapes with 2-inch cookie cutters.
08 - Arrange cut cookies 1 inch apart on prepared baking sheets. Bake for 10–12 minutes until edges are lightly golden.
09 - Allow cookies to cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
10 - Beat softened butter until creamy. Gradually mix in powdered sugar, vanilla extract, and 1 tablespoon milk or cream, beating until fluffy. Add more milk if needed. Tint frosting with food coloring if desired.
11 - Spread or pipe about 1 tablespoon filling onto half the cookies. Cap with remaining cookies to form sandwiches.
12 - Roll edges of sandwich cookies in holiday sprinkles to finish.
