Ingredients

  • Salt: 1/4 tsp
  • Unsalted butter (softened): 1 cup (225 g) for cookies & 1/2 cup (115 g) for filling
  • Granulated sugar: 1 cup (200 g)
  • Large egg: 1
  • Pure vanilla extract: 2 tsp for cookies & 1/2 tsp for filling
  • Powdered sugar (sifted): 1 3/4 cups (210 g)
  • Milk or heavy cream: 1-2 tbsp
  • Festive holiday sprinkles: 1/2 cup (80 g)
  • Optional food coloring: Red and green

Instructions

Prepare baking sheets:
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
Mix dry ingredients:
Whisk flour, baking powder, and salt in a medium bowl.
Cream butter and sugar:
Beat butter and granulated sugar with mixer until light and fluffy, about 2 to 3 minutes.
Add egg and vanilla:
Beat in egg and vanilla extract until combined.
Form dough:
Gradually mix in dry ingredients, scraping bowl as needed, until a soft dough forms.
Chill dough:
Divide dough in half, wrap in plastic wrap, and chill for at least 30 minutes.
Shape cookies:
Roll dough on lightly floured surface to 1/4-inch (6 mm) thickness. Cut with 2-inch (5 cm) round or shaped cutter.
Bake cookies:
Place cookies 1 inch (2.5 cm) apart on sheets. Bake 10 to 12 minutes, until golden at edges. Cool 5 minutes, then transfer to racks to cool completely.
Prepare filling:
Beat butter until creamy. Add powdered sugar, vanilla, and 1 tbsp milk, beating until smooth and fluffy. Add more milk if needed. Tint with food coloring if desired.
Assemble sandwiches:
Spread or pipe 1 tbsp frosting onto half the cookies. Top with remaining cookies to make sandwiches.
Decorate:
Roll edges of sandwich cookies in sprinkles.
