# Directions:
01 - Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil to prevent sticking.
02 - Pat chicken thighs dry with paper towels. In a small bowl, combine olive oil, smoked paprika, garlic powder, onion powder, salt, and black pepper. Coat chicken thighs evenly with the mixture.
03 - Arrange chicken thighs skin side up on the prepared baking sheet. Bake in the oven for 25 minutes.
04 - While the chicken is baking, whisk together BBQ sauce, honey, apple cider vinegar, and Dijon mustard in a mixing bowl.
05 - After 25 minutes of baking, brush chicken thighs generously with the prepared honey BBQ sauce. Return to oven and bake for an additional 15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the glaze is caramelized.
06 - During the final chicken bake, place potato chunks and garlic cloves in a large pot. Add cold, salted water to cover and bring to a boil over high heat. Cook until potatoes are fork-tender, approximately 15 to 18 minutes.
07 - Drain potatoes and garlic well, then return them to the pot. Add warmed milk, butter, salt, and black pepper. Mash using a potato masher or ricer until smooth and creamy. Fold in chopped chives if desired.
08 - Plate the honey BBQ chicken thighs hot alongside creamy garlic mashed potatoes and serve immediately.
