01 - 24 round buttery crackers (e.g., Ritz)
02 - 6 slices mild cheddar cheese
03 - 24 small strips black olives
04 - 12 small squares yellow bell pepper or cheddar cheese
→ Dip
05 - 1 cup whipped cream cheese
06 - 1/2 cup roasted red peppers, finely chopped
07 - 2 tablespoons chives, finely chopped
08 - 1 teaspoon lemon juice
09 - Salt and pepper to taste
# Directions:
01 - In a medium bowl, combine whipped cream cheese, finely chopped roasted red peppers, chives, lemon juice, salt, and pepper. Mix until smooth. Transfer to a serving bowl and refrigerate until ready to serve.
02 - Using a small round cookie cutter or glass, cut the cheddar cheese slices into circles slightly smaller than the crackers.
03 - Place one cheddar cheese circle on top of each cracker.
04 - Lay a thin strip of black olive across the center of each cracker to form the belt.
05 - Place a small square of yellow bell pepper or cheddar cheese in the center of the olive strip to represent the belt buckle.
06 - Arrange the decorated crackers on a platter around the bowl of dip and serve immediately.
