# Directions:

01 - Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or leave ungreased if nonstick sheets are used.
02 - In a large bowl, cream unsalted butter and granulated sugar until light and fluffy, approximately 2 to 3 minutes.
03 - Beat in the large egg, pure vanilla extract, and almond extract if using, until fully combined.
04 - Gradually add all-purpose flour and fine sea salt to the mixture, stirring just until incorporated to avoid overmixing.
05 - Fit a cookie press with a fan or star-shaped disc and fill it with dough.
06 - Press cookies directly onto baking sheets, arranging 3 to 4 cookies overlapping slightly at the base to create a fan-shaped cluster.
07 - Sprinkle cookies with colored sanding sugar or sprinkles if desired.
08 - Bake for 9 to 11 minutes until edges just turn golden.
